Bobs Bitchin Brownies

Preheat oven to 180C or 160C (fan)
  • Bake for 25 minutes
  • Check if complete with a little shake: If the middle wobbles, bake for another 5 minutes. Repeat until wobbling subsides
Line 20cm square tin with parchment roll
  • Pour batter into parchment-lined tin
  • Push mixture into corners & gently shake tin to settle
185g unsalted butter
  • Chop into small pieces
  • Melt in bowl over saucepan
  • Gently pour chocolate into wet mix
  • Gently fold in with figure-eight motion (don't let any air out!)
  • Add dry mix to white mix
  • Gently fold with figure-eight motion.
  • Stop just before completely combined (still a little dusty)
  • Stir in chocolate chunks
185g top notch dark choc
3 large eggs Whisk until creamy / milkshakey about 10 minutes
275g caster sugar
95g plain flour Sieve over medium bowl and gently combine
40g cocoa powder
50g white choc Chop into small pieces
50g milk choc
